This one’s brought to us by our friends at CoopeTarrazú, a renowned cooperative in San Marcos, Costa Rica, known for producing some of the country’s most celebrated coffees. The Process
Rather than pulping the cherry before drying, the full fruit is left intact and dried slowly on raised beds under careful supervision. As the coffee dries, the sugars and acids within the cherry concentrate into the seed, building sweetness, body, and layered fruit character. The result is a cup that’s bold, juicy, and deeply aromatic — without sacrificing clarity.
