Finca Idealista - Black Honey
Matagalpa, Nicaragua — Black Honey Process

Ben Weiner didn't come to coffee the usual way.

He came to Nicaragua first — through a senior thesis on debt relief, through trips into the mountains outside Matagalpa, through a growing conviction that the best way to change something is to be present in it. Gold Mountain Coffee Growers grew out of that work, connecting smallholder Nicaraguan farmers to specialty roasters worldwide. Finca Idealista is Ben's own farm — the flagship of everything Gold Mountain has built — and it operates the way you'd expect from someone who chose this place on principle.

Machetes instead of herbicides. A mushroom to kill insects instead of pesticides. Volcanic filters to keep mucilage-filled wash-water out of the watershed. Chickens roosting above the compost to infuse it with nitrogen. Pickers paid double local rates. And one more detail that says everything about where Ben's priorities sit: Finca Idealista bought a rainforest just to protect it.

The coffee reflects all of it.

This is a black honey microlot — Pacas and Caturra grown at 1,200 meters in Matagalpa, processed at the maximum mucilage level possible and dried slowly in the sun. The result is full-bodied, sweet, and layered in a way that changes as it cools. Candied citrus and honey up front, rooibos tea and a smooth brown sugar finish as the cup opens up. Slightly earthy. Incredibly complex. The kind of coffee that rewards a slow pour-over on a morning when you're not in a hurry.
