The Story

This one’s brought to us by our friends at CoopeTarrazú, a renowned cooperative in San Marcos, Costa Rica, known for producing some of the country’s most celebrated coffees. Tirra Estate, one of their flagship projects, was acquired with a clear vision: to push the boundaries of microlot production and research while setting new standards for quality and sustainability.

The Process

Tirra Estate’s honey process begins by pulping ripe cherries but leaving a layer of sticky mucilage intact. As the beans dry slowly on raised beds, the natural sugars gently ferment, developing a layered sweetness and fruit-forward complexity that bridges the clarity of washed coffees and the vibrance of naturals.
