With just enough nuttiness to temper the syrupy, plummy sweetness, the La Pastora is the perfect subject for whichever brew method has your fancy.

La Pastora caught our attention at the cupping table with its uniform flavor, attributed to the singular soil quality of the San Jose province of Costa Rica, and the processing methods that CoopeTarrazu employs. Sedimentary soil composition encourages coffee crops toward a distinct acidity, and this rich mountain soil creates a complex fruit to be harvested and processed by CoopeTarrazú. The co-op represents over 3,500 partners in the province, and is committed to the welfare of those partners and their communities.
